The solterito is a cold dish, typical from Arequipa. Broad beans are a very nutritious food with a type of vegetable protein, rich in complex carbohydrates and fiber that helps us with intestinal transit
Ingredients: (5 servings)
1 onion
2 tomatoes
200 gr. fresh cheese
3 corns
150 gr. black olives
½ kg green broad beans
Parsley to taste
Salt and pepper to taste
Olive oil to taste
2-3 tbsp vinegar
Preparation:
In a saucepan, boil the broad beans and corns. Once the corns are cooked, degrain them.
Chop the onion, tomato, cheese, and olives. Put them in a bowl and season with olive oil, salt, pepper, and vinegar. Mix the ingredients.
Once seasoned the solterito is ready to serve. Sprinkle chopped parsley to decorate.
