Mushrooms have multiple benefits, and one of them is they provide proteins, so they can be served to replace meats. They help to strengthen the immune system since they contain a large number of antioxidants. They also help to prevent constipation due to their high fiber content and the large quantity of water. They are low in calories.
Ingredients:
400 gr sliced mushrooms
100 gr red onion
2 limo chili
2 cloves garlic
¼ cup chopped cilantro
2 shelled corns
¼ rocoto
2 lemons
Lettuce leaves (to decorate)
2 tomatoes (diced)
2 sweet potatoes
Salt and pepper to taste
Preparation:
Squeeze the lemon and season with salt and pepper. Add the cilantro, rocoto, garlic, and limo chili and marinate the mushrooms in this preparation for ten minutes. Add the tomato, julienne the onion, wash it and place it on the ceviche.
Cook the corn and the sweet potato to use as a side dish.
Serve on lettuce and garnish.
* Tip: For the mushrooms to be very clean, immerse them for five minutes in warm water with a drizzle of vinegar.
